Job Duties:
· Plan and develop Japanese-inspired menus featuring sushi, sashimi, specialty rolls, noodles and grilled dishes, while maintaining the restaurant’s established culinary concept and quality standards.
· Prepare and oversee the preparation of specialty Japanese dishes requiring advanced knowledge of fish selection, trimming, portioning, knife techniques, sushi rice preparation, rolling, grilling and professional food presentation.
· Create and test new recipes, seasonal menu items and house-special rolls by combining traditional Japanese cooking methods with contemporary flavours and presentation techniques.
· Supervise cooks and other kitchen employees during food preparation and service to ensure that all dishes are produced accurately, efficiently and consistently.
· Train and instruct kitchen staff in specialized Japanese food preparation techniques, including raw fish handling, sushi and sashimi preparation, roll assembly, sauce preparation, grilling, garnishing and plating.
· Demonstrate the proper use of specialized kitchen tools and equipment, including Japanese knives, sushi preparation equipment, grills, fryers and food-temperature control equipment.
· Establish and enforce standardized recipes, portion specifications, plating procedures and food-quality controls to maintain consistency across dine-in and takeout orders.
· Inspect seafood, meat, produce and other ingredients for freshness, quality and suitability, and determine the quantities of food and kitchen supplies required for daily operations.
· Requisition ingredients and kitchen supplies and maintain accurate records of inventory, food consumption, waste, food costs and related operating data.
· Review ingredient usage, menu pricing, food costs and kitchen operating expenses, and implement appropriate portion-control and waste-reduction measures.
· Ensure that meals are prepared in accordance with food-safety, sanitation and allergen-control procedures, including the preparation of modified dishes for customers with food allergies or dietary intolerances.
· Coordinate kitchen workflow and assign preparation and cooking duties based on employees’ experience and technical abilities to ensure timely service during peak operating periods.
Job requirements:
· Experience: Minimum 5 years of commercial cooking experience in Japanese cuisine
· Education: Completion of secondary school is required
· Language: English
