Specific Skills

• Managing the day-to-day food & beverage operations within the Lodge and managing employees, and maintaining and elevating service, food safety and sanitation standards.
• Plan, organize, direct, control and evaluate the operations of the restaurant
• Determine type of services to be offered and implement operational procedures
• Recruit staff and oversee staff training
• Direct support in the day-to-day operations for the housekeeping and front line including, but not limited to, such as Set staff work schedules and monitor staff performance, employee management, purchasing, etc.
• Leading the food & beverage team by establishing and maintaining open & collaborative relationships with employees, reviewing employee satisfaction surveys to identify and address employee problems or concerns.
• Control inventory, monitor revenues and modify procedures and prices
• Ensure exceptional customer service is being provided to guests, through leading by example and empowering employees with a focus on continuous improvement.
• Negotiate arrangements with suppliers for food and other supplies
• Negotiate arrangements with clients for catering
• Control food and labour costs
• Drive the financial success of the unit’s operation
• Conduct regular audits to ensure company & regulatory standards are met.
• Adhere to safety policies and procedures by following company Safe Work Practices and Standard Operating Procedures.
