Responsibilities

Tasks

Estimate amount and costs of supplies and food items
Estimate labour costs
Maintain records of food costs, consumption, sales and inventory
Analyze operating costs and other data
Demonstrate new cooking techniques and new equipment to cooking staff
Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
Create new recipes
Instruct cooks in preparation, cooking, garnishing and presentation of food
Prepare and cook complete meals and specialty foods for events such as banquets
Supervise cooks and other kitchen staff
Prepare and cook food on a regular basis, or for special guests or functions
Prepare and cook meals or specialty foods
Requisition food and kitchen supplies
Arrange for equipment purchases and repairs
Consult with clients regarding weddings, banquets and specialty functions
Plan and direct food preparation and cooking activities of several restaurants
Plan menus and ensure food meets quality standards
Prepare dishes for customers with food allergies or intolerances
Recruit and hire staff
Supervise activities of sous-chefs, specialist chefs, chefs and cooks
Train staff in preparation, cooking and handling of food
Leading/instructing individuals

Additional information

• Assist the Executive Chef in planning, organizing, directing, controlling, and evaluating kitchen operations.
• Supervise, coordinate, and schedule the activities of cooks, kitchen helpers, and other kitchen staff.
• Prepare and oversee the preparation of meals, ensuring consistency in quality, presentation, and portion control.
• Assist in developing menus, seasonal offerings, daily specials, and recipes while considering customer preferences, food costs, and operational requirements.
• Monitor food quality and ensure all dishes meet the resort’s standards and guest expectations.
• Maintain inventory levels, order food and kitchen supplies, and assist in controlling food costs and minimizing waste.
• Ensure proper storage, handling, and rotation of food products in accordance with food safety regulations.
• Train, mentor, and evaluate kitchen staff on food preparation techniques, kitchen procedures, and workplace safety practices.
• Participate in recruitment, onboarding, and performance management of kitchen personnel as required.
• Monitor kitchen operations during service periods and ensure efficient workflow in a fast-paced environment.
• Ensure compliance with Alberta Health Services regulations, food safety standards, sanitation requirements, and workplace health and safety policies.
• Inspect kitchen facilities and equipment to ensure cleanliness, functionality, and compliance with health and safety regulations.
• Address and resolve operational issues, staff concerns, and guest feedback related to food quality and service.
• Collaborate with management and front-of-house staff to ensure a positive guest experience and efficient service delivery.
• Assist with catering, banquets, special events, and seasonal hospitality operations throughout the resort.
• Maintain accurate records related to inventory, food costs, kitchen schedules, and food safety procedures.
• Act on behalf of the Executive Chef during absences and ensure uninterrupted kitchen operations.
