The Role:

Reporting to Kitchen Department Head, the Cook (NOC 63200) is primarily responsible for preparing and cooking a variety of specialty Chinese food dishes and assisting in the promotion of this specialized cuisine to the Asian and other communities. The Cook supervises a team of kitchen helpers while ensuring that the preparation of the specialized food style and technique are performed in accordance with corporate policies and regulatory procedures.

Experience

·       2 years to less than 3 years of experience in preparing/cooking a variety of speciality Chinese food dishes in commercial kitchens.

·       1 year to less than 2 years of prior experience in supervising 5+ people

·       Knowledge with food safety and control of food costs and wastage

·       Ability to lift up to 50lbs

Supervision

Major Responsibilities:

·       Prepare, handle and cook specialty foods in the assigned specialty, including Chinese barbecue, Chinese Dim Sum and Chinese stir-fry

·       Participate in new Chinese menus and dishes research and development process, encourage innovations

·       Provide training and feedbacks to the kitchen helpers in the assigned area

·       Maintain a clean workstation throughout the day in accordance with health and safety policies

·       Ensure recipes are being executed as stated in the SOPs with excellent quality and food proportions are selected accurately

·       Ensure accurate receiving and inventory of ingredients/foods

·       Ensure that food is properly stored and handled at all times and all temperature records are properly maintained

·       Assist in the promotion of the specialized cuisine to Asian customers, as well as customers from other communities who visit the store

Knowledge, Skills and Ability Requirements

1.    2 year to less than 3 years of proven work experience in one or more of the following specialty Chinese food techniques and styles:

·       Chinese barbecue (including varieties of poultry, pork and sausages marinated in different sauces and barbequed with specialized equipment);

·       Chinese Dim Sum cuisine and snacks (including varieties of steamed, deep-fried, baked, pan-fried, marinated savories and sweet items from Northern China);

·       Chinese stir-fry technique

2.    Possess a formal cooking certificate from a recognized institution will be an asset

3.    Experience managing and supervising kitchen staff will be an asset

4.    Demonstrate strong organization, and problem-solving skills

5.    Demonstrate accountability, and reliability

6.    Possess a positive, proactive, and self-motivated work attitude

7.    Committed to comply with company’s rules and regulations

8.    Ability to work as a part of a team in a fast paced, food preparation environment

9.    Ability to communicate ideas and recommendations to team members in a professional manner

10. Must be flexible to work in various shifts, including weekdays, weekends, holidays, morning and evening hours

11. Ability to speak and understand English language
