Blue Water Cafe is looking for an experienced, hands-on Saucier to join their award-winning team. The successful candidate will have the opportunity to be part of an experienced kitchen team and work with exceptional seasonal products.
Essential Duties and Responsibilities:
Prepare and cook stocks, sauces, and gravies from scratch, including veal, chicken, fish fumet, lobster fumet, dashi, and their derivatives
Butcher, portion, clean, and cook whole fish, live seafood, and meats efficiently and to specification
Maintain sanitation standards throughout the kitchen to comply with Provincial regulations
Provide input into product ordering, as well as cost control and monitoring
Ensure food quality in presentation and production are consistently maintained at a premium level
Assist with menu development as required
Assist with cost control, monitoring and ordering of supplies as required
Other related duties and responsibilities as assigned
Experience and Qualifications:
At least five years of culinary experience in an upscale fine dining environment, specifically as a Saucier
Advances skills in butchering, portioning and preparing whole fish, live seafood, and meats
Completion of secondary school
Red Seal Certification
Excellent interpersonal skills and fluent communication skills in English
Ability to prioritize, organize, and follow through as necessary
Must possess a passion for food and developing knowledge of all cooking methods
Food Safe certification is an asset
